What we look for
Full P&L ownership, not just floor oversight, someone who knows what's driving the number, not just watches it
Rosters built to a labour cost target, not just filled to cover shifts
A track record of holding a floor together through a bad service without it becoming a bad night
Supplier negotiation, stock control and wastage management experience
Has hired, trained and let people go, and can talk through how each of those actually went
